Chocolate Chunk Pancakes

Though I’m late, I wanted to wish you guys a belated Happy Pancake Day! 🙂 Pancake Day, also known as Shrove Tuesday, is celebrated on the day preceding Ash Wednesday (the first day of Lent) with a nice plate of soft pancakes, a dollop of butter (okay, not just a dollop) and loads of syrup (or/and jam, Nutella, chocolate, whipped cream… you get the drift!). While I cannot (and will not) confine my pancake eating to the one day, I believe celebrating pancake day is a necessity. I mean, what better way to go into 40 days of fast and abstinence than to scarf down pancakes the day before? I think its perfect! Now don’t get me wrong; I’m not assuring you that I’ll give pancakes up all through lent. But I’ll try. 😛

So, while David Beckham showed us how he has mastered the art of flipping a pancake sans spatula and Crepe Affaire had all their Instagram followers drooling over their stunning creations, we at The Foodscape (click to follow us on Instagram) household were being all gluttony, enjoying these warm pancakes dotted with glossy chocolate chunks! Pancake perfection!

Now, even though I’ve figured out the recipe for The Perfect Pancake, I’m still on a hunt for great pancake recipes. I love browsing through blogs and recipe aggregators and at some point during my search, I came across this recipe for some stunning super fluffy pancakes by Riz (Rizwan Asad) of ChocolatesandChai.com. This recipe really caught my eye and I just had to try it (It’s a great site; you should check it out too!)! Of course, I tweaked it a bit and put my own spin on it. And my pancakes didn’t turn out as super fluffy as the ones in the photographs attached to the original recipe (probably because of the changes I made), but hey these Chocolate Chunk Pancakes were seriously pillowy soft! 😀

Here’s what you need:

  • All Purpose Flour – 2 cups
  • Baking Powder – 4 tsp
  • Granulated Sugar – 2 tbsp (I reduced the sugar because I intended to add chocolate chunks to the batter)
  • Milk – 1 and 1/2 cups
  • Eggs – 2
  • Salted Butter – 56 grams, melted
  • Vanilla Extract – 2 tsp
  • A pinch of Cinnamon Powder
  • Dark Chocolate – 120 g, chopped into chunks

Here’s how you make these amazing Chocolate Chunk Pancakes!

Step 1: Make the batter

In a large bowl, blend the flour, baking powder, sugar, milk, eggs, melted butter and vanilla extract until the batter is smooth and creamy. Then add in the cinnamon powder, give it a stir and mix in the chocolate chunks.

Step 2: Fry the Pancakes

Grease a skillet or shallow frying pan with butter. When the butter starts foaming, measure out 1/3 cup of batter and pour it on to the pan. When bubbles begin appearing on the surface of the pancake, flip it over and fry it till it turns golden. Fry off the rest of the batter. Serve warm!

These pancakes are perfect for breakfast, brunch, lunch, dinner or even a snack. They just require about 10 minutes of prep time, two steps and voila, they’re ready!

Fluffy, melt-in-the-mouth  and packed with chocolatey goodness; what more could you want from pancakes? These beauties are a bit messy to fry, what with the melting chocolate and all. They took some effort to flip, but hey, it’s all well worth it.

If I may say so myself, these Chocolate Chunk Pancakes are amazeballs! And you don’t need to wait for Pancake Day next year to try this recipe. Go ahead, whip up a batch and sink your teeth into their cloud-like yummyness; you can thank me later! 😉
