Ever been a couch potato in desperate need of a sweet fix? In seconds you’re considering heading to the patisserie around the corner to sink your teeth into one of their spectacular sugary creations. Here’s the problem – getting off the couch takes about 30 seconds. Getting dressed takes about five minutes (if you don’t comb your hair!) and walking to the bakery, another seven minutes. But who are we kidding? You’re not going to walk to the bakery. You’re going to drive! So, in between putting the car in drive, pulling out of the driveway and finding a spot to park before you can achieve sweet nirvana, there’s about a ten-minute gap!

I am always a couch potato. I kid you not! I rush, (literally sprint!) through my day’s routine so that I can get to parked-on-the-couch-watching-Gilmore-Girls-time as soon as I possibly can. And if I manage the same by  5 pm, I am unapologetically proud of myself! So, these sugary cravings I talk about, they are pretty routine. But, because getting off the couch and getting dressed takes eons, I change my mind almost as quickly as I would have scarfed down that sweet treat! (Making healthier choices, you see!) 😛

Before you change your mind about your sweet indulgence, here’s a thought – you can put together this absolutely sensational Apple Pie Mug Cake (cheers to fusion desserts!) within the comfort of your home in all of 6-7 minutes, if you are counting prep time! Sweet, tart and moist with a crunchy crumbed top, it’s got the goodness of Apple Pie and the ease of a Mug Cake rolled into one! 😀

Apple Pie Mug Cake

Here’s what you need:

  • Red & Green Apples – 1/2 cup, cubed
  • All Purpose Flour – 1/4 cup
  • Vegetable Oil – 2 tbsp
  • Milk – 1 & 1/2 tbsp
  • Brown Sugar – 2 tbsp
  • Baking Powder – 1/4 tsp
  • Cinnamon Powder – 1/8 tsp
  • Streusel – 1/4 cup (1/2 tbsp butter, 1/8 cup flour and 1 tbsp brown sugar blitzed together to form a coarse crumb)

Here’s how you put this blissful Apple Pie Mug Cake together in minutes!

Step 1: Place the cubed apples in the mug and pop it into the microwave for a minute to soften the apples.

Step 2: Tip the flour, oil, milk, brown sugar, baking powder and cinnamon powder into the mug and give the batter a good mix, until well incorporated.

Step 3: Smooth the surface and top the batter with the prepared streusel and apple slices. Pop the mug cake into the oven and bake at medium heat for 2 and ½ minutes. Sprinkle with a pinch of cinnamon and dig in!

This Apple Pie Mug Cake is sublime. It captures that amazing flavour of beloved Apple Pie in a treat that can be put together in a fraction of the time! Also, it is tender, delicately sweet, light and fabulously flavoursome (Cinnamon & Apples FOR THE WIN!!) – everything a good cake should be. I’m not going to say that this is the best Mug Cake recipe you’ll ever come across, because I’m ever experimenting. But really, this is a seriously good mug cake! One that would be a shame to miss out on! 😉

This is definitely not the healthiest way to kick off the new week (there are apples in there, so let’s say healthy-ish), but if you’re looking for something to give those Monday blues the boot, this Apple Pie Mug Cake will do the trick!

Note: Dear Reader, because everyone’s microwave ovens are different, this cake can take more/less time to bake to perfection. To ensure that the cake does not under-bake/burn (who wants that when there’s a craving to satisfy?), I suggest baking this cake at medium heat for a minute and then in 30 second bursts till the top is firm and a skewer inserted into the centre of the cake comes out with a few moist crumbs attached.

    1. Thank you! 😊 Frozen streusel sounds like a great idea! I haven’t tried it yet, but I have frozen pastry dough before, so I’m guessing it should work beautifully. Only thing is, you would need to let the streusel thaw a bit before popping it on top of the mug cake. But make sure the butter doesn’t melt! Otherwise, I think it really would work. Do give it a try and let me know. 😊
