Healthier Blueberry Scones

You need these Healthier Blueberry Scones in your life, trust me!

When I was little, I imagined that someday I’d be at an afternoon tea party in the English countryside, sipping Builder’s tea and relishing finger sandwiches and buttery scones. This scene seemed fitting. Because, though young, I knew I was growing up to be the kind of person who loved long, lurking moments of peace, friendship, conversation and sometimes solitary. Of course this dream was abetted by the many Enid Blyton books I consumed as if they breathed life into my being!

Flash forward a few years. My dream turned to dust as I learned that I found tea revolting. The first time I tried it, my head ached for the rest of the day. So, I never went back. I found love in coffee and pledged my life and loyalty to its sweet seduction. Yet, evening tea/coffee sessions with my mum were now ‘a thing’. We would sit with our respective mugs on the kitchen floor, talking about everything under the sun while we nursed our hot brews and enjoyed little croissants and rusk. Clearly not my English fairy tale, but about a million times better. Oh, how I long for those evening tea/coffee sessions with my mum!

If only we had these delicious Blueberry Scones back then, I’d bet those memories would be the slightest bit sweeter… 😉

Now that I’ve shared my love for evening tea/coffee rituals with you, let’s talk about these Healthier Blueberry Scones. Lately, with an agenda to concentrate on my health more, I’ve been keen on experimenting with healthier baking. During my search for knock-out healthier baked treats, I came across a recipe for The Ultimate Healthy Blueberry Scones by Amy over on Amy’s Healthy Baking. So, I adapted it, and here we are! Crusty-on-the-outside and melt-in-the-mouth on the inside, these scones are the stuff of dreams! Dreams with blissful pockets of fresh blueberry goodness! Don’t believe me? Find out for yourself?

Here’s what you need:

  • Whole Wheat Flour – 190 g + more for dusting/kneading
  • Unsalted Butter – 2 tbsp, cold and cubed
  • Baking Powder – 1 & 1/2 tsp
  • Salt – 1/4 tsp
  • Greek Yogurt – 120 g
  • Honey – 3-4 tbsp (more if you would like the scones sweeter)
  • Milk – 3 tbsp
  • Vanilla Extract – 2 tsp
  • Fresh Blueberries – 100 g

Here’s how you make these delightful Healthier Blueberry Scones:

Step 1: Preheat the oven to 200 °C. In a large bowl, combine flour, baking powder and salt. Add in the cubed butter and using your fingers or a pastry cutter, cut in the butter until the mixture is crumbly. Create a well in the centre and pour in honey, Greek yogurt, milk and vanilla extract and mix until well incorporated.

Step 2: Fold in the blueberries and turn the dough out on to a clean surface that has been dusted with flour. At this point the dough will be quite sticky. Gently knead the dough, while adding flour, little at a time, until the dough is still soft, but not sticky. This should take about 3-5 minutes. Remember not to use a lot of pressure while kneading as you don’t want to squish the blueberries.

Step 3: Slowly and gently roll out the dough and using a cookie cutter, cut up circles. Place the scones on a cookie sheet lined with parchment paper and brush them with some milk. Pop them into the oven for 20-25 minutes or until the tops of the scones are golden and crusty. Take them out and leave to cool on a wire rack.

Oh-so-tender, crumbly and buttery perfection is how I can best describe these scones! They are everything you want in an amazing tea-time treat – subtly sweet with a delicate bite and lots of blueberries for freshness and flavour. They are indulgent, yet light, and a great way to begin an evening on the right note.

What I love about these scones is you can make them ahead and store them in an airtight container for the next day’s breakfast. Will they go a bit soft? Yes. But pop them back into the oven for about 5 minutes at 200 °C and they will crisp up just the right amount! Make ahead breakfasts? Count me IN! 😀
