Fourth in the May Mango Mania roundup and just in time for the weekend; presenting *drum roll* this gorgeous Mango Pink Moscato Sangria!
About a week ago, I asked my dad if we had some Tequila lying around the house. I needed it for some recipe testing (which didn’t work out in the end. Boohoo!). My request was met with some surprise which is understandable; I don’t normally ask for booze, apart from rum for Tiramisu and Christmas Fruit Cake, and Bailey’s & Kahlua, because I LOVE anything coffee!
After making my request, I walked to the kitchen.Β A few minutes later, when I returned to my desk, there were three bottles sitting on it – Tequila, Extra Dry Martini and Nerola Syrah! Turns out, my request was met with surprise AND eagerness. It seemed like my dad was saying a huge “FINALLY!” after all those declined drinks! π
Clearly, I’m not much of a drinker. Don’t hate me, but I’ve always found alcohol bitter and unappealing. My gamut of favourite drinks includes Rum & Coke (because I work so closely with rum in my baking, I’ve grown to love it!) and Bailey’s Irish Coffee (because the boyfriend makes a really mean one, and well, coffee!). π
Naturally, this is how I’ve earned my granny reputation! Heck, you probably think that about me now too! To put it nicely, some people call me ‘wise’ for my age; which I take as a complement! π
Yes, I sleep early most nights. And if I’m up late it’s because… umm, I’m reading (current read: Americanah by Chimamanda Ngozi Adichie; such a good book!) or Netflixing (Chef’s Table & The Let Down). I realize I’m not making this better for myself, but hear me out please.
I’d like to argue that it is because I don’t like alcohol in general, I KNOW this Mango Pink Moscato Sangria is the stuff of dreams (it is bl**dy delicious!). Also, because Alison Bell’s portrayal of a new mom in The Let Down is so real, I KNOW mothers deserve a few rounds of this pretty, pink cocktail this Mother’s Day!
This recipe serves 4. Here’s what you need:
- Pink Moscato – 2 cups
- Mango – 1 cup, cubed
- Blueberries – a handful (about 1/4 cup)
- Lime – 1/2, thinly sliced
- Fresh Mint – a few sprigs
- Simple Syrup – 1/2 cup (a syrup of equal parts sugar and water heated until the sugar dissolves and cooled)
- Mixed Berry Juice – to serve
- Club Soda – to serve
Here’s how you make this quick & easy Mango Pink Moscato Sangria:
- Tip the cubed mango, blueberries, sliced lime and mint into a glass pitcher. Pour the Pink Moscato wine over it and muddle gently.
- Add in the simple syrup and stir. Cover the pitcher tightly with cling film and refrigerate overnight.
- When ready to serve, pull out the wilted mint from the drink, and pour the sangria into wine glasses up to two-thirds full.
- Add in a splash (about a tablespoon) of mixed berry juice and top with club soda.
- Garnish with fresh mint and drink up!
In itself, Pink Moscato (I used Barefoot Pink Moscato; not sponsored) is a really wonderful wine. It’s sweet and crisp with refreshing notes from red fruit and mandarins. Add to it juicy mangoes, blueberries, slices of lime and mint, and you’ve got a tango of beautifully blending flavours that make this cocktail not just pretty to look at, but also downright irresistible!
To amp it up, I added a splash of mixed berry juice and some club soda while serving, to give the drink some fizz and freshness. Perfectly refreshing summer sangria!
I’m all about changing things up this Mother’s Day; instead of breakfast in bed, let’s make our moms some fruity Mango Pink Moscato Sangrias (only if you’re old enough to be around liquor!). Also, if you’re a mom looking to treat yourself, this Mango Sangria is for you! Have it while enjoying some much-needed me time, or wow your girlfriends with it at ladies night! π
This cocktail is all about enjoyment, all about you.Β The possibilities are endless. Pair your favourite wines with the fruits you love, a splash of juice/squash here and a spritz of club soda there. π Deck it up with a sprig of fresh mint and dive in!
To all the mothers out there, I wish you a very Happy Mother’s Day (in advance)! Trust that in your children’s hearts, you are celebrated every day! You may be an unsung hero to the world; but to us, you’re a superhero in whose shadow we find safety, on whose shoulders we soar and with whose guidance we realize dreams and shape our futures! Thank you for all that you do. β€
Before you go, here are a few tips on how to make and relish the best Mango Pink Moscato Sangria:
- The fruits need to soak in the wine overnight. Make the sangria the previous evening, cover and refrigerate. The next evening, the flavours will be off the hook!
- To make this drink completely non-alcoholic, I’d suggest leaving the Pink Moscato out and using mixed berry juice in its place. Soak the fruits in the mixed berry juice (leave out the simple syrup) overnight and top with club soda just before serving. It makes a really delish mocktail!
I hope you’ve enjoyed this post, Dear Reader. And that you’ll give this Mango Pink Moscato Sangria a try! Having said that, I’ve got to get serious for a bit. I cannot lay enough emphasis on one thing – Don’t Drink & Drive. This is a cause very close to my heart, and I request you to never get behind the wheel even if it’s just been one sip, one beer, or whatever you consider to be a ‘negligible’ amount of alcohol. If you drink, don’t drive. And if you’ve got to drive, don’t drink. Far too many lives are being lost over something that is completely in our control, and we need to change that. β€
Thank you for reading all the way to the end. This was a fun recipe to test, style, shoot and write. Something completely out of my comfort zone, yet I really enjoyed this Mango Pink Moscato Sangria. I hope you do too! π
