Having grown up in the Middle East, I cannot say I ever loved summer. I do not have memories of basking in the glorious sun, with a small lemonade cart, trying to sell the freshly squeezed concoction to those passing us by on the street, like in the movies. Or picnics on the beach; a session of splashing in the water followed by sandwiches and juice cartons. Nope.

Instead, I have memories of waiting outside the school gate, heaving that heavier-than-lead schoolbag, sweat trickling down my back and cursing the 2pm sun! Also, endless water fights and ice being slipped down each other’s shirts just because we needed the respite. That’s what 40 C+ temperatures can do to you!

But now, I love summer. I don’t love the heat, but the sun gives me so much energy to write, photograph, and play. I love the beaches during the summer because they are so much cooler than the city. I dislike the feeling of melting owing to the humidity, but that is easily fixed with a tall glass of this Virgin Pina Colada. Yes, I said virgin. Because I think it is that much more refreshing! (Don’t roll your eyes at me!) And also, why should adults have all the fun? 😛

Naturally, I was a bit bummed when I had to travel to India bang in the middle of the monsoons. That cut my summer awfully short, not to mention the fact that the drastic change in weather has kept me ill for over two weeks.

So, while I blow my reddened, sore, itchy nose for the 67497320th time, all I’m thinking about is sitting at a large brunch table with sausages and Eggs Benedict, scones and jam, pancakes, waffles, pitchers of this Virgin Pina Colada and orange juice, pots of coffee and tea, and my loved ones all huddled together. A girl can dream, can’t she?

This recipe serves 4. Here’s what you need:

  • Pineapple Juice – 113 ml
  • Coconut Milk – 113 ml
  • Ice – 4-6 cubes
  • Fresh Pineapple – sliced, for garnish
  • Cherries – for garnish

Here’s how to make this super easy Virgin Pina Colada:

  • Blitz together the pineapple juice, coconut milk and ice in a blender for about 2-3 minutes, or until the drink is smooth, thick and frothy.
  • Pour the Virgin Pina Colada into glasses and garnish with slices of fresh pineapple and cherries.
  • Serve chilled.

Don’t you just love how easy it is to put this drink together? I know I do! It comes together effortlessly and with the slightest bit of planning. Which makes it the perfect option for a reviving summer drink.

Also, it is a welcome change from the humble lemonade, and all its many versions. Not that I have anything against lemonade; on the contrary, I love its freshness and citrusy punch. But every once in a while I want a summer cooler that isn’t as tart as a lemonade, nor as thick and heavy as a shake. In comes this Virgin Pina Colada to save the day!

Mildly sweet pineapple juice, when paired with the wonderful tropical aroma of coconut milk, gives a sweet scent that harbors the power to transport you to the Caribbean. While the coconut milk keeps it milky yet light, the pineapple brings freshness, tanginess and just the right amount of sugary flair to round it all up. A combination that is absolutely charming, and downright irresistible, if you ask me!

We’ve got just a few weeks before we welcome the nip in the air with open arms. Let’s enjoy these days with a glass of Virgin Pina Colada in each hand, shall we? Okay, okay, if this kid friendly drink is not your jam, you know you could just add a bit of Malibu Coconut Rum to the mix, right?
