Classic Blueberry Pancakes; could winter mornings get any better? ❤

Happy Hump Day, people! Can you believe it’s November already? Is it just me or do you also feel like we just celebrated New Year 2017 a few weeks ago?!

I live in Mumbai, India, a place where even a trace of winter is nowhere to be found, but I swear there’s a nip in the air! Maybe this year will be different? I’m still in my shorts though, so it could just as well be wishful thinking. 😛 Either way, Winter Is Coming! (I could not resist!) And now that it’s getting cooler everywhere, it’s time to eat LOTS of pancakes in bed. Because, what’s better than snuggling in your comfiest duvet and Netflix-ing your way through the day with some coffee for warmth and a stack of pancakes to gorge on? 🙂

I’ve done so many pancake recipes on the blog, but is there such a thing as too much pancake? I think NOT! Thus, joining the ranks of Orange Chocolate Pancakes, Chocolate Chunk Pancakes and Fluffy Oatmeal Pancakes are these dreamy, classic Blueberry Pancakes!

This recipe makes 6 pancakes. Here’s what you need:

  • All Purpose Flour – 1 cup
  • Baking Powder – 2 tsp
  • Sugar – 1 tbsp
  • Milk – 3/4 cup
  • Vegetable Oil – 2 tbsp
  • Egg – 1
  • Greek Yogurt – 1 tbsp
  • Vanilla Extract – 1 tsp
  • Blueberries – 1 cup
  • Butter – for frying
  • Honey/Maple Syrup – for drizzling

Here’s how to make these Blueberry-bejeweled beauties!

  • In a bowl, whisk together flour, baking powder, sugar, milk, Greek yogurt, oil and the egg. Beat the batter until it is well-combined. Add in the vanilla extract and give it a final mix.
  • Place a skillet on medium heat and grease it with butter. Pour 1/4 cup of batter on to the pan. top with a few blueberries.
  • Allow the pancake to cook on one side until golden and bubbles start popping on the surface. Flip it over and cook until golden on the second side too. Repeat the same with the rest of the batter.
  • To serve, stack up the pancakes and top with blueberries. Drizzle honey/maple syrup over the stack and DIG IN!

If I may say so myself, these Blueberry Pancakes are the bomb! The batter is super simple to put together; really just a five-minute job. Yes, the frying can be a bit of a pain, considering that’s what lies between you and stuffing your face with pancakes. But trust me, the wait is so worth it! These pancakes are super fluffy, pillowy and simply delicious. The experience in heavenly – drizzling honey/maple syrup over your stack of pancakes; watching that glossy syrup drip down the sides (while imagining it in slow-motion, very a la cookery TV shows); digging in with your fork and feeding yourself a bite of soft, cloud-like pancakes, speckled with the freshness and sweetness of blueberries! SO GOOD! 😀

I want to say that the whole family is going to love these pancakes (because it’s true!), but since I’m home alone and treating myself to all the foods I love, I think you should  make a batch for yourself, even if you’re having a solo-breakfast situation going on. 🙂 I went through this whole process of weighing whether or not I should make these pancakes; since it was just me for breakfast and I can make do with some coffee and toasties. It’s not that the family is fussy or particular about meals – they would love coffee and toasties too – but I seldom cook for myself. That’s not to say that I don’t cook the food I love, I do; it’s just the intention behind cooking is usually for a loved one, keeping in mind their likes/needs/wants.

Treating yourself from time-to-time is beyond important. We are all so busy adult-ing, that we often forget to remind ourselves that we’re special! So take some time out for yourself, do what you love and while you’re at it, indulge in these Blueberry Pancakes! It works for me every time, I hope it does for you too! ❤
