Perfect Egg-less Chocolate Cake

 

Ever bitten into a slice of cake and thought, “Gosh! That’s vile!”? Only to find out the cake is egg-less; and you wonder why – just WHY – would someone ruin cake by not using eggs to fluff up the batter?! Yeap, me too. Every time I attended a vegetarian birthday party, I would dread the store bought egg-less cake. And thanks to my innumerable horrible experiences with egg-less cake, I swore I’d never bake any.

That was until I began seeing a guy who is happily non-vegetarian but comes from a vegetarian family that has quite the sweet tooth. They say ‘necessity is the mother in invention’. In my case necessity pushed me to experiment and innovate. 😀 Remember that Egg-less Marble Cake I baked a long time ago? That was among my initial forays into the world of egg-less baking; and probably the only one back then that came out perfectly! 😛

Three years down the line, after a lot of trial and error, I’ve perfected my Egg-less Chocolate Cake recipe. So, for our third anniversary, I baked this delicious beauty topped with a mountain of berries. Without further ado, here’s the recipe!

Here’s what you need: 

For the Chocolate Cake:

  • All Purpose Flour – 1 cup
  • Baking Powder – 3/4 tsp
  • Baking Soda – 3/4 tsp
  • Sugar – 3/4 cup
  • Cocoa Powder – 1/4 cup + 1 tsp
  • Vegetable Oil – 1/4 cup
  • Milk – 1/2 cup
  • Yogurt – 1/2 cup
  • Salt – 1/2 tsp
  • Vanilla Extract – 1 tsp
  • Hot Water – 1/2 cup

For the Chocolate Ganache:

  • Dark Chocolate – 225 g, roughly chopped
  • Unsalted Butter – 1 tbsp
  • Heavy Cream – 3/4 cup

Here’s how you make this beautiful Perfect Egg-less Chocolate Cake:

  • Preheat your oven to 170 degrees Celsius.
  • In a big bowl, mix together the flour, sugar, baking powder, baking soda, and cocoa powder. Pour in the vegetable oil, milk and yogurt and whip the batter for about three minutes.
  • Add in the salt and the vanilla extract.
  • Pour in the hot water and give the batter a good mix until well incorporated. Don’t worry about the batter being too runny, that’s exactly how you want it.
  • Pour the batter into a greased and lined pan and pop it into the oven. Bake for 30-35 minutes, or until a skewer inserted into the cake comes out clean.
  • Once the cake is baked through, pull it our of the oven, lightly cover with aluminium foil and allow it to cool completely.
  • In the meantime, for the Chocolate Ganache, bring heavy cream and unsalted butter to a slow boil.
  • When bubbles begin appearing at the edges of the cream, take it off the heat and pour it over the chopped dark chocolate.
  • After a minute, fold the cream mixture into the chocolate, making sure to use slow strokes so as not to aerate the ganache. Leave to cool.
  • When the cake is cooled, pour the Chocolate Ganache generously over it and top with berries. Alternatively, you could top it with sprinkles, crushed nuts, marshmallows or anything of your choice!
  • Now’s the best part, DIG IN! 😀

Then I thought, “Eh, what the heck?” And ended up piling on more berries! 😀

This stunner was the perfect amalgamation of both our favourite things – his chocolate and mine berries; making it the ideal celebration cake for our anniversary. But in all honesty, you don’t need an occasion to bake this delicious cake. It makes for a great stress-buster, tea-time treat, brunch favourite and above all, a splendid midnight snack. 😛

What’s the best bit? With or without the Chocolate Ganache – or any other icing/ frosting you would prefer – this cake is moist, airy and so sublimely melt-in-the-mouth that you’ll find yourself going back for more. It has that gorgeous cakey texture that is simply fabulous; something that’s always missing in the store bought variety of egg-less cake.

I’ve baked this Perfect Egg-less Chocolate Cake several times and in many forms – as cupcakes, mini bundts, loafs, you name it; and it has never ever gotten a bad review. It’s definitely a crowd-pleasure, just like a good chocolate cake must be.
